I’d always followed the golden rule with avocados & never cooked them. Recently though I’ve had them cooked and they’ve been good – granted they were cooked with bacon which might explain why they were so delicious. I love avocado on toast for breakfast simply sprinkled with salt and pepper -perfectly uncomplicated. That to me really is the perfect way to eat them or fill their cavities with a little homemade salad dressing). Bacon and avocado together are one of those delightful food combinations that works so well. If you’ve ever had them together on a sandwich you’ll know what I mean.

I love eggs too so putting all these elements together on toast makes a delicious breakfast combination that is easy to make and yummy. You have the crunch of the toast for texture, the bacon for smokiness, the avocado for creaminess, the egg for richness and the sweet chili sauce for heat and sweetness. In my 20’s and 30’s I put sweet chili sauce on everything. I don’t use it quite as much today but I still love it and it works really well in this recipe.

  •  1 avocado, peeled
  • salt and freshly ground pepper
  • 4 slices bacon, halved
  • 2 teaspoons olive oil
  • 2 eggs
  • 2 slices crusty bread, toasted and buttered
  • 1 tablespoon sweet chili sauce
  1.  Heat oven to 375°F (190°C). Grease a wire rack. Place on baking sheet.
  2. Cut each half of avocado into 4 slices. Sprinkle with salt and pepper. Wrap bacon around each slice. Place on wire rack. Cook 20 to 25 minutes or until bacon is coked and browned, turning once during cooking.
  3.  Heat oil in medium frying pan over medium heat. Carefully crack eggs into pan. Sprinkle with salt and pepper. Cook 3 minutes or until white is set.
  4.  Arrange bacon wrapped avocado on toast. Top with egg; drizzle with chili sauce. Serves 2.
